creations that we enjoy frequently with our own family. Many have been

Maria's Black Bean Soup
Ingredients:

1 lb. bag of dried black beans, soaked in cold water
overnight
·
1 large cube of soft chicken bullion
·
1 small white onion, diced, meat from 4 pieces of
chicken, cut or torn into bite-size pieces
·
12-15 cups water
·
4 cloves fresh garlic chopped fine
·
1-2 teaspoons ground cumin
·
1 teaspoon chili powder
·
2 teaspoons salt
·
2 teaspoons garlic powder, additional seasonings as
desired.
Directions:
Drain water from beans and rinse
in a strainer. place all ingredients in a large stock pot with a lid.
Bring to a slow simmer, stirring occasionally. Simmer at least two
hours until broth thickens and beans are tender. Serve in bowls with
fresh salsa, diced green chilies and lowfat sour cream garnish. Tastes
great with a side of cornbread. Serves 6. This dish is very low in fat
and very high in fiber.
Garlic and Rosemary Potatoes
Ingredients:

4-5 russet potatoes
·
4-6 sprigs of rosemary (4" in length each)
·
5 cloves fresh garlic, 1 teaspoon sea salt or other
coarse salt, seasoning salt

1/2 cup olive oil, grated parmesan cheese
·
Progresso seasoned garlic & herb bread crumbs
Directions:
Preheat oven to 400 degrees. Line
a cookie sheet with tin foil. Scrub potatoes and leave skin on; cut
into walnut-size pieces. Place potato pieces in a microwave-safe bowl
and drizzle with olive oil. Stir, then microwave potatoes on high for
4-8 minutes or until pieces are tender outside, but still firm on
inside.
While potatoes are in microwave,
place peeled garlic cloves and sea salt in a mortar and pestle. Crush
the cloves and grind them into the salt until a coarse paste forms.
Using scissors, cut the leaves off the rosemary stems. Discard stems.
Drizzle about 1 teaspoon olive oil in a small area on a cutting board,
place the rosemary leaves on the oiled spot and chop finely.
Add the finely chopped rosemary
to the garlic paste, pour in a liberal amount of olive oil and grind a
bit more. Remove the potatoes from the microwave and stir in the
garlic/rosemary/olive oil mixture to coat the potatoes well. Spread
the potatoes on the cookie sheet. Sprinkle lightly with season salt,
bread crumbs and parmesan cheese. Bake at 400 degrees for 20-25
minutes or when potatoes are golden brown and crispy on the outside.
Aida's Banana Bread
Ingredients:

2/3 cup buttermilk
·
2/3 cup vegetable oil
·
1-1/4 cup sugar
·
2 cups flour
·
3 eggs
·
1-1/4 teaspoon baking powder
·
3/4 teaspoon baking soda
·
2 bananas
·
3/4 cup walnut pieces
Directions:
Preheat oven to 350 degrees.
Combine all ingredients and blend well. Spray 3 small loaf pans with
non-stick cooking spray and pour batter into pans. Bake for 50 minutes
or until loaves are golden and a toothpick inserted in the center of a
loaf comes out clean. |
