Recipe: Greek Salad

One of my favorite summer dishes is the Greek salad. It’s ridiculously easy to make and has the fresh vibrant tastes of summer vegetables. It’s not a dish that will weigh you down when you want to do all those fun in the sun activities and if you want to look like a Greek god or goddess this salad will help you get there.

Ingredients (serves 4)

1 red onion halved and thinly sliced

Kosher salt

3 tablespoons balsamic vinegar

Grated zest and juice of 1 lemon

1 teaspoon dried oregano

1 teaspoon chopped fresh parsley

Fresh ground pepper

¼ cup extra-virgin olive oil

4 to 6 medium vine ripened tomatoes, quartered

1 cup kalamata olives

5 Persian cucumbers halved and sliced

4 bell peppers sliced

1-4oz block of Greek feta cheese packed in brine


Place the onion, tomato, bell pepper, cucumbers, and olives in a large salad bowl sprinkle in the oregano, lemon zest and parsley. Pour in the olive oil, lemon juice and balsamic vinegar and lightly toss. Salt and pepper to taste

Place the block of feta cheese on top of the salad and drizzle generously with extra-virgin olive oil. If you like you can garnish with fresh chopped oregano and parsley. Serve.
