15 oz. can of white beans
1 Tbsp olive oil
4-5 fresh sage leaves
2 cloves garlic, crushed
4 black peppercorns
½ cup chicken broth
Beans with sausage
5 Tbsp olive oil
1 1/2 pounds sweet Italian chicken sausage
4 cloves garlic, peeled and crushed
3-4 canned plum tomatoes, chopped
1 Yellow onion chopped
1 cup spinach or arugula
Pinch red pepper flakes
1 cup tomato purée
1 tablespoon of apple cider vinegar
Salt (about 2 teaspoons) and freshly ground black pepper
1. Drain and rinse the beans then place in a sauce pan place beans and 1 Tbsp olive oil, 4-5 fresh sage leaves, 2 cloves garlic, crushed, 4 black peppercorns, ½ cup chicken broth. Bring to a gentle simmer
2. Heat one tablespoon of olive oil in a large, heavy-bottomed skillet over low heat.Sweat one yellow onion on low until it becomes transparent. place sausage in pan and turn up heat to medium and brown the sausage (you can remove sausages from their casings ,if the sausage has come in casings for a dish that is a little more refined), and fry on the skillet until lightly browned, about 3-4 minutes. Do not stir that much and do not crowd the pan, or the sausage won’t brown well. Add 3-4 Tbsp olive oil, garlic, tomato puree, and red pepper flakes, stirring occasionally until slightly thickened, about 5 minutes.
3. Add the beans, chopped tomato, apple cider vinegar and spinach or arugula. Season to taste with salt and pepper. Simmer a few minutes longer, stirring gently, until sausage is cooked through the greens wilt and the sauce has thickened. Be careful not to break up the beans.
4. Serve hot in bowl.
